Stacy is a senior extension educator at Penn State Extension Lancaster County. She holds a bachelor's degree in Food Science and Nutrition Science and a master's degree in Food Science from Pennsylvania State University. She focuses on providing educational programs for health and wellness and food safety, technical support, outreach presentations, and community programming.

Stacy oversees the LIFT, Let's Cook, and Dining with Diabetes programs for Lancaster County. She co-leads the Everybody Walk Across Pennsylvania and Walk by Faith statewide programs. Stacy is a certified ServSafe instructor and proctor who teaches ServSafe in Lancaster and Chester counties. She teaches Cooking for Crowds: A Volunteers Guide to Safe Food Handling for Consumer Food Safety and Home Food Preservation.
