Pumpkin Hummus

When preparing this recipe, start with clean countertops and utensils. Wash hands with soap and water. Wash the whole, fresh thyme by rinsing it under
cold, running water.
Ingredients
- 1 cup 100% pure pumpkin purée
- 1 (15 ounce) can no-salt-added chickpeas, drained and rinsed
- ¼ cup tahini
- 1 Tablespoon apple cider vinegar
- 2 Tablespoons extra-virgin olive oil
- â…› teaspoon cumin
- ½ teaspoon ground cinnamon
- ¼ teaspoon paprika
- Optional garnishes: toasted pumpkin or sesame seeds, fresh thyme, sprinkle of paprika or cinnamon, drizzle of honey or maple syrup
Directions
- In a blender or food processor, add the pumpkin purée, chickpeas, tahini, apple cider vinegar, extra-virgin olive oil, cumin, cinnamon, and paprika and blend until smooth.
- Scoop into a bowl, cover, and chill in the refrigerator until ready to serve.
- Before serving, add the optional listed garnishes.
