The Produce Safety Standard is the first federally mandated standard for the growing, harvesting, packing, and storage of fresh produce for human consumption. The standard does not require farms to have a written food safety plan, but it does require them to maintain records of some specific activities. Not all fresh produce is subject to the standard. The General Provisions subpart of the standard contains information about covered and non-covered produce, definitions, who is subject to the standard's requirements, and information about extensions. Some of the standard's key requirements include, but are not limited to, qualification and training requirements for personnel handling produce covered by the standard or food contact surfaces, requirements for supervisors, and training records. The standard includes employee health and hygiene control measures to prevent contamination, provisions for sick or injured employees, mandatory hygiene practices for personnel, and requirements for visitors. The Agricultural Water subpart includes general water quality requirements and criteria for certain intended uses of water, inspection of water sources and distribution systems, water testing requirements, and frequency. From sampling, corrective actions including the treatment of water for agricultural use, as well as measures to be taken for water use during harvesting, packing, and storage, and requirements for record keeping. The standard contains standards for biological soil amendments of animal origin and prohibitions for the use of waste of human origin. These standards include acceptable treatment processes, microbiological standards for treatments, application requirements and harvest intervals, requirements for record keeping of treatments, storage and handling of soil amendments. Requirements related to domestic and wildlife included in the standard aim to minimize the risk of biological contamination with feces from domestic and wild animals. This subpart also includes the management of animal intrusion events in the orchard. Cultivation, harvesting, packing, and storage activities include standards for the handling of freshly harvested agricultural products, the exclusion from the market of fallen fresh agricultural products, packing activities including product packaging requirements and packaging materials. The standard contains specific requirements for equipment, tools, buildings, and sanitation. This part also includes transportation requirements for the products covered by the standard. Pest control standards, sanitary and handwashing facilities, waste disposal, plumbing, and the management of excrement and domestic animal waste— the first thing you need to do is determine if this standard applies to your farm, and then you will begin working on your food safety program.
