Extension Educator, Food Safety & Quality / Food, Families, & Health
Elaine currently serves as an Extension Educator based in Blair County. She provides community-based educational programs related to retail and consumer food safety in Blair, Bedford, Cambria, Fulton, Huntingdon, and Somerset counties. Elaine also coordinates community-based health and wellness programs and supervises three Nutrition Education Advisers who provide research-based nutrition education to limited income audiences in Bedford, Blair, Centre, Huntingdon, Juniata, and Mifflin counties. These nutrition and health programs help individuals, families, and youth enhance their nutrition, increase their physical activity, and develop life skills needed for self-sufficiency and better health. Elaine is responsible for developing community partnerships, maintaining program integrity, and fiscal management of local program funds.
Elaine is a registered dietitian through the Commission on Dietetic Registration and an active member of the Academy of Nutrition and Dietetics. Prior to joining Penn State Extension, she coordinated statewide community nutrition programs for older adults through 25 area agencies on aging in Virginia and provided clinical nutrition services in a mental health setting.
