Cucumber-Basil Mocktail Recipe

When preparing this recipe, start with clean countertops and utensils. Wash hands with soap and water. Wash the whole, fresh produce by rinsing the fresh basil and gently rubbing the lime under cold, running water. Prewashed, packaged items do not require further washing.

Ingredients

  • 1 liter club soda, plain or lime flavored
  • 1 Tablespoon lime juice (or juice of 1 lime)
  • â…“ cup fresh basil
  • ½ cucumber, sliced
  • 1 teaspoon honey (optional)

Directions

  1. Put all ingredients into a blender and pulse for 3–5 minutes until well-blended.
  2. Strain liquid into a small pitcher. Discard solids.
  3. Pour over ice and garnish with a fresh cucumber slice and basil.

Tip

  • Blending carbonated water can cause the gas bubbles to expand and burst, and can cause overflow from the blender. To reduce this, blend on a slower speed and add only half the club soda to the blender; add the other half after blending.
