Classic Caesar Salad Recipe

When preparing this recipe, start with clean countertops and utensils. Wash hands with soap and water. Wash whole, fresh produce by rinsing parsley and lettuce and gently rubbing lemon and garlic under cold, running water. Prewashed, packaged items do not require further washing.

Ingredients

  • 5 cups (or a 10-ounce bag) of romaine lettuce, torn into bite-size pieces

Dressing:

  • 1½ teaspoons fresh lemon juice
  • ½ garlic clove, minced (or pinch of garlic powder)
  • 2 Tablespoons chopped fresh parsley or 2 teaspoons dried
  • ¼ cup plain fat-free yogurt
  • 2 Tablespoons light mayonnaise
  • ½ teaspoon Dijon mustard
  • 2 Tablespoons reduced-fat Parmesan cheese
  • Pinch ground black pepper

Directions

  1. In a large bowl, prepare the dressing by combining the lemon juice, garlic, parsley, yogurt, mayonnaise, mustard, cheese, and pepper. Whisk until well blended.
  2. Add lettuce to the bowl and toss gently until evenly coated.
