6 servings | serving size: 1/6 of recipe (about ½ cup)Â
When preparing this recipe, start with clean countertops and utensils. Wash hands with soap and water. Wash whole, fresh apples by gently rubbing under cold, running water. Prewashed, packaged items do not require further washing.
IngredientsÂ
- Nonstick cooking spray
- 1 teaspoon plus 1 Tablespoon olive oil, divided
- 3 medium Fuji or Gala apples, peeled (if desired), cored, and cut into ½-inch cubes
- 2 teaspoons ground cinnamon, halved
- â…› teaspoon salt
- 1 cup rolled quick oatsÂ
- 1 cup unsalted pecan halves
- 1 teaspoon light brown sugar
- 2 teaspoons honey
- 2 Tablespoons water
DirectionsÂ
- Preheat oven to 350°F (177°C) and spray a 9-by-9-inch baking pan with nonstick cooking spray to coat the edges on all sides.
- In a large skillet, heat 1 teaspoon of olive oil over medium heat. Add the apples, 1 teaspoon of cinnamon, and salt. Sauté until the apples are soft, about 5–7 minutes.
- Using a food processor or blender, add the remaining ingredients: 1 Tablespoon olive oil, 1 teaspoon cinnamon, rolled oats, pecans, brown sugar, honey, and water. Pulse the mixture until you get a crumbly texture that sticks together.
- Spread the sautéed apples evenly across the bottom of the pan. Layer the rolled oat and pecan crumble over the apples evenly.
- Place in the oven and bake until the crumble is golden brown, about 15–20 minutes.
- Remove from the oven, place pan on a cooling rack, and allow to cool.
- Any sweet baking apple can be used.
- If desired, serve with low-fat milk or low-fat yogurt.
