Mashed Potato Pancakes
2 eggs, separated
1 cup mashed potatoes- made from instant
2 tsp. baking powder
½ cup flour
1 cup milk
Add egg yolks to mashed potatoes; mix well. Alternate milk with flour and baking powder, mix until smooth. Fold in stiffly beaten egg whites and drop spoonfuls of batter onto greased griddle or skillet. Brown on each side and serve.
