Pizza in Your Pack
Children will need help from an adult! Don't forget to drink water while you hike.
Yield: 4 servings
Serving Size: 1 English Muffin
Prep Time: 15 minutes

Ingredients:
- 4 whole wheat English muffins
- 1 tomato, washed
- 8 slices of low fat
cheese
(American, cheddar or part- skim mozzarella) - Your favorite vegetables
(Try chopped broccoli, sliced peppers, onion or mushrooms)
Equipment:
- Knife
- Aluminum foil
Directions:
- Slice English muffin in half, lightly toast if desired.
- Cut tomato into slices.
- Add one slice of tomatoes to each English muffin.
- Layer one piece of cheese on each half.
- Add any of your favorite veggies.
To Serve:
- Wrap each half in foil.
- Place the pizza with a
frozen water bottle or ice pack in an insulated container to keep it cool on the
trail.
