Banana Bars
Children will need help from an adult! Don't forget to drink water while you hike.

Ingredients:
Bars:
- 2/3 cup sugar
- 1/2 cup low-fat sour cream
- 2 tbsp margarine or butter
- 2 egg whites
- 3/4 cup mashed bananas
- 1 tsp vanilla
- 1 cup flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 2 tbsp chopped walnuts
Frosting
- 1-1/4 cup powdered
sugar
- 1 tbsp butter or
margarine
- 1 to 2 tbsp skim
milk
- 1/2 tsp vanilla
Equipment:
- 9 x 9 x 2 inch pan
- Mixer
- Large mixing bowl
- Measuring cups
- Measuring spoons
- Nonstick cooking spray
- Zip-top bags
Directions:
Bars:
- Preheat oven to 450°F.
- Spray pan with
nonstick
cooking spray. - Beat sugar, sour cream, margarine, and egg whites in large bowl for 1 minute with a mixer.
- Beat in bananas and
vanilla for 30 seconds. - Beat in flour, salt
and
baking soda for 1 minute. - Stir in nuts.
- Spread in pan.
- Bake 20-25 minutes or until light brown. Cool and frost.
Frosting:
Mix all
ingredients together
until smooth.
To Serve:
- Pack individual serving sizes in zip-top bags.
