Harvesting Onions

The tops of the onions will fall over as they get mature. Do not break over the tops to hasten the process because your onions won’t keep as well. When most of the tops have fallen over you can harvest them by pulling the onion in the morning. Let your onions air dry in a dry spot with good air circulations.
Let them cure for two to three weeks.
When they have fully cured, you can cut off the dried tops, leaving a short piece on them. Store them in a cool dry location.
If you have onions that have a large neck or have been damaged, you should use these first because they won’t keep well.
