Listeria monocytogenes has long been a human pathogen of concern in the food industry, in particular among manufacturers of ready-to-eat sliced meats, raw milk, and soft cheeses. Unlike other human pathogens that can be transmitted through food, Listeria can grow in continuous wet and cool food production environments where it can survive for years or decades.
The Food for Profit workshop takes you step by step through the information necessary to start and run a small food product business, especially directed to individuals who will be making and packing their products for resale through grocery stores, farm markets or restaurants.

Ice Cream 101: Introduction to Frozen Desserts is designed to provide anyone interested in ice cream with the basics of ice cream composition, formulation, and processing. Past and present Penn State faculty directors of the famous Penn State Ice Cream Short Course will serve as principle instructors.
The Food Microbiology Short course provides insight into the most recent developments of food-borne pathogens, toxins, and contaminants that may occur in a food plant environment.
