Fermenting sauerkraut in mason jars
Is it possible to ferment sauerkraut in the same jars they will be processed in?
Fermenting sauerkraut in jars is not recommended.
Because of their small size, it is difficult to prevent the cabbage from rising above the brine where it is likely to dry out or to form mold.
Fermentation, and thus the formation of acid, is less consistent and you will get a lower quality product. Use 5 gallon containers as described in "Let's Preserve Sauerkraut"
