Dining with Diabetes Class ends in Claysburg
The three-month follow up class for the Claysburg Senior Center Dining with Diabetes program was held on January 15th. This class had the challenge of getting through the holiday season with all those tasty holiday goodies. The good news is that most of the participants were able to maintain or lower their A1C (a measure of blood glucose control) over this time period. One member of the class noted that the class “made him much more aware of his portion sizes of food” so during the holiday’s he focused on controlling these so as not to over indulge.
Chef Barb prepared a hearty vegetable stew with corn muffins and fruit and yogurt parfait for taste testing. The stew was low in salt but the addition of a mixture of herbs and spices made it very flavorful and something that most people felt they would try at home.
